XOXO Eggs

Serves two people.

Whether you know this dish as Gashouse Eggs, egg with a hat, or egg in a hole, this breakfast classic gets a delicious twist with the addition of bacon and parmesan cheese. Baked in the oven, the recipe can expand to feed a crowd.

Ingredients:

  • 8 slices bacon (not thick cut)
  • four 1/2-inch thick slices bread
  • 2 tablespoons butter or margarine, at room temperature, or more as needed
  • 4 large eggs
  • 4 tablespoons shredded parmesan cheese, or more as needed
  • 2 to 3 teaspoons fresh thyme leaves
  • kosher salt and freshly ground black pepper to taste
  • chopped chives or chopped parsley leaves for garnish (optional)

Instructions:

  1. Heat oven to 400 degrees. Arrange bacon on a rimmed baking sheet and bake until it is halfway done, about 6 to 7 minutes.   2. Line a half sheet pan with nonstick foil of parchment paper.
  3. Butter one side of each bread slice and place slices butter side down in the prepared pan.
  4. Use a cookie cutter or glass to cut a 3-inch hole in the center of each slice and place the centers butter side down in the pan between the bread slices.
  5. Sprinkle bread slices and centers generously with Parmesan and season lightly with thyme leaves.
  6. Place two bacon slices in an X over the hole in each bread slice. Gently crack an egg into the center of each bread slice.
  7. Season to taste with salt and pepper and bake in the oven for 12 to 14 minutes until eggs are just set.
  8. Garnish with chives or parsley and serve immediately.
