Waffle Iron Omelets and Potatoes

Let your waffle iron flex its muscles and cook a fluffy omelet or crispy stuffed hash browns. Fun and easy to make, amounts are flexible and you can use your favorite veggies and cheese.

Ingredients for Eggs

4 large eggs
kosher salt and freshly ground black pepper to taste
3 tablespoons chopped ham or cooked bacon or sausage crumbles
1/4 cup shredded cheddar cheese
3 teaspoons chopped green onions
butter or margarine for the waffle iron (optional)

Instructions

  1. In a medium bowl, beat eggs and season with salt and pepper. Mix in ham, cheese and onion.
  2. Heat waffle iron to low and spray both sides with cooking spray. If desired, brush both sides with butter.
  3. Slowly pour in egg mixture, close the waffle iron, and cook for 4 to 5 minutes, until omelet is golden and puffy. Serve immediately.

Ingredients for Stuffed Hash Browns

1 and 1/2 cups frozen shredded hash brown potatoes, divided
4 tablespoons shredded cheddar cheese
4 tablespoons chopped ham or cooked bacon or sausage crumbles
pickled jalapeno slices (optional) 
butter or margarine for the waffle iron (optional) 

Instructions

  1. Heat waffle iron to medium-high to high and spray both sides with cooking spray. If desired, brush both sides with butter.
  2. Distribute half the hash browns over the bottom of the waffle iron, then top with cheese and chopped ham. Top with remaining potatoes and arrange jalapeno slices over the top.
  3. Close the waffle iron, press down and cook for about 10 minutes, or until potatoes are browned and crispy, and cheese is nice and melty. It’s ok to peek! Serve immediately.
