Mocha Ice Cream Torte

A macaroon crust and a sprinkling of toffee bits are sandwiched between layers of espresso, coffee and chocolate ice cream.

This easy no-bake ice cream torte is a fitting way to celebrate summer’s last hurrah. A macaroon crust and a sprinkling of toffee bits are sandwiched between layers of espresso, coffee and chocolate ice cream.

Serves up to 16 people. 

Ingredients

  • Two 10-ounce packages coconut macaroons
  • One 8-ounce package toffee bits
  • One pint each good-quality ice cream: espresso, coffee and chocolate flavors
  • Chocolate or fudge topping (optional)

Preparation

Prepare a 9-inch springform pan by lining with plastic wrap and placing a parchment circle on the bottom. (Loaf pans work as well and you won’t have to worry about leaking.)

Open the macaroons and divide into thirds. Break one of the thirds into crumbles and press into bottom of the pan. Cover with about one-third of the toffee bits. Take one of the pints of ice cream from the freezer, and with a large spoon scrape flat-tish pieces from the carton and layer them like petals over the crust to cover. Even the layer out with a spatula.

Divide remaining macaroons into thirds. Crush another third of the macaroons and layer those over the first layer of ice cream. Freeze for 15 minutes. It’s best to keep things as firm as possible, rather than working with runny ice cream.

Layer a second pint of ice cream over the macaroon layer, spread smooth with the spatula and then cover with another third of the macaroons and one-third of the toffee bits. Return to the freezer for 15 minutes.

Repeat with the final pint of ice cream, macaroons and toffee bits.

Cover with plastic wrap and freeze at least 2 hours, or overnight. Remove from freezer, open the pan, remove plastic wrap, cut into slices and serve topped with fudge sauce for extra richness.

This is also beautiful made into a Neapolitan with layers of chocolate, vanilla and strawberry ice cream.

Cook’s note: Find the macaroons in the kosher food section. They contain about 15 each and make a great cheesecake crust as well. Toffee bits are found in the baking section with the chocolate chips.
