Sweet & Sour Chicken

September is National Chicken Month, National Rice Month and National Mushroom Month, oh my! This recipe fills the bill for all three. No gooey red sauce here; the sweet and sour flavor shines through subtly, using simple ingredients.

Serves 4 to 6

  • 11/2 pounds boneless skinless chicken breast, cubed
  • 2 tablespoons olive oil
  • 1/2 red onion, cut into large dice
  • 1/2-1 cup sliced mushrooms
  • 1 large bunch broccoli, broken into florets
  • 1 green bell pepper, cut into large dice
  • 1 red bell pepper, cut into large dice
  • 1 generous cup shredded carrot
  • 2 cloves garlic, minced
  • 11/2 tablespoons cornstarch
  • 1/4 cup low sodium soy sauce
  • 2 tablespoons vinegar (Seasoned rice vinegar or apple cider vinegar work well.)
  • 2 tablespoons brown sugar
  • 1 tablespoon ketchup
  • 1/2 teaspoon ground ginger
  • 1 20-ounce can pineapple tidbits with juice
  • 1 1-pound brown rice

Prepare rice according to package directions. Since brown rice takes longer to cook, use its cook time to decide when to start cooking the chicken. (We used a bag of Lundberg Jubilee brown rice blend, which took 1 hour to cook from start to finish, and started the chicken when the rice had 10 minutes left to cook.)

In a very large skillet, over medium-high heat, lightly brown chicken, about 4 minutes. Add onion, mushrooms broccoli, bell peppers, carrot and garlic. Stir fry for 1 to 2 minutes, then cover and steam another 2 minutes.

In a small bowl, combine cornstarch, soy sauce, vinegar, brown sugar, ketchup and ginger. Whisk together and pour mixture into the skillet, along with the pineapple and liquid. Stir together and with the lid off, bring to a full boil. Serve over cooked brown rice.


Cook’s note: Throw in chopped celery, sliced water chestnuts or slivered almonds for some crunch. This recipe is very adaptable, and almost any veggie would be delicious added to the mix.

Hi, new to KCTS 9, So far, can't see any art instruction programs. A recent reply from KCTS 9 indicated a possibility of this happening.
