Chicken & Spinach Rice Bowl

This one falls under the category of desperation dinners in our house. We keep packaged spinach and rotisserie chicken on hand for those nights when we feel too rushed to cook. Perfect for a rainy night!

Serves 6

  • 2 cups cooked chicken or turkey, shredded or diced
  • 2 tablespoons soy sauce, divided, or more to taste
  • 1 1/2 cups rice
  • 3 cups plus 2 tablespoons chicken broth, divided
  • 4 cups (1 package) baby spinach
  • 1 bunch green onions, sliced, divided
  • 2-3 tablespoons toasted sesame oil
  • 2 tablespoons toasted sesame seeds (optional)

Prepare rice as directed on package, using chicken broth instead of water.

Meanwhile, combine chicken and half the soy sauce in a saute pan and turn heat to medium. Stir in spinach and half the green onions. Add 2 tablespoons chicken broth and heat until mixture is warm and spinach starts to wilt. Add cooked rice and remaining soy sauce to taste. Stir gently to combine.

Divide rice mixture among serving bowls. Top with remaining green onion and drizzle each with sesame oil. Sprinkle with toasted sesame seeds and serve. Quick and delicious!
