December 11, 2017

Savory bites of cheese are flecked with flavorful jalapeno and covered in a crispy panko crust. Perfect for holiday parties or the big game, these irresistible appetizers will disappear quickly and your guests will ask for more!

Makes about 45 appetizers.

  • One 8-ounce package cream cheese, softened
  • 8 ounces (2 cups) freshly grated Parmesan cheese
  • 2 jalapeno peppers (about 1/2 cup), seeds and ribs removed and finely chopped
  • 1 large egg at room temperature, lightly beaten
  • 1 cup panko breadcrumbs, or more as needed

Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper.

Mix cream cheese, Parmesan, jalapenos and egg until blended. Using a teaspoon to scoop from the bowl, shape mixture into slightly-smaller-than-1-inch balls. Keep them small so they’ll flatten while baking.

Roll the balls in the panko to lightly coat. Place balls on lined sheet pans, spacing them at least 2 inches apart. Bake for about 15 minutes, until crust is golden brown. Serve warm.

Cook’s note: Make extra cheese mixture, roll into balls and keep covered and refrigerated. Bake as needed after rolling in the panko. The amount of jalapenos in this recipe add flavor but not heat, so add more jalapenos or a pinch of cayenne for an extra kick.
