Hearty Short Ribs

Serves four to six people

Serve up hearty short ribs, slow-baked until tender in a BBQ sauce made with the simplest pantry ingredients. Easy and delicious!


4 pounds boneless beef short ribs, sized in 3-inch long pieces
kosher salt and freshly ground black pepper

BBQ Sauce
2/3 cup light brown sugar
1 teaspoon Hungarian paprika
1/2 teaspoon granulated garlic
1 tablespoon white vinegar
1/2 teaspoon dried thyme leaves, crushed
2/3 cup ketchup
1 tablespoon mustard
1 tablespoon Worcestershire sauce


  1. Preheat oven to 300 degrees. Lightly oil or spray the bottom of a 9 x 13-inch baking pan.
  2. Place the short ribs in the pan and season to taste with salt and pepper.
  3. In a small bowl, combine sauce ingredients and pour over the ribs. Use a spoon or brush to cover the ribs evenly.
  4. Cover pan tightly with aluminum foil and roast for 2 hours and 30 minutes. Remove foil and bake an additional 30 minutes to brown the ribs. The meat should be falling-apart tender. If not, cover and continue to cook in 20-minute intervals, checking for doneness.
  5. Serve with your favorite sides, such as mashed potatoes, cornbread or grilled vegetables.

Cooks Note:

Use boneless short ribs if possible. They are much easier to eat!
