Pumpkin Bars

Looking for a delicious Halloween treat? Try these easy and delicious Pumpkin Bars. Perfect for a crowd!
Makes 36 bars
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 4 beaten eggs
  • 1 16-ounce can pumpkin
  • 1 1/2 cups sugar
  • 1 cup cooking oil
Cream Cheese Frosting
  • 2 cups powdered sugar
  • 4 ounces cream cheese, softened
  • 1/4 cup butter, softened
  • 1 teaspoon vanilla
  • cup chopped nuts (optional)
For the bars, preheat oven to 350 degrees. Blend together flour, baking powder, cinnamon, baking soda and salt. In a separate large bowl, combine eggs, pumpkin, sugar and oil; ; add dry ingredients and beat until combined. Spread batter in an ungreased 15 x 10-inch jellyroll pan. Bake for 25 to 30 minutes. Cool and frost with Cream Cheese Frosting. Cut into bars.
For the frosting, sift powdered sugar through a strainer to remove any lumps. In a mixing bowl beat together cream cheese, butter and vanilla until light and fluffy. Gradually add the powdered sugar, beating until smooth. Spread over cooled cake, and sprinkle with chopped nuts if desired. Cover and store in the refrigerator.
