Apple Butter Bars

These easy bars are the perfect end to a holiday meal.
Makes 18 to 20 bars
  • 1/2 cup butter, softened
  • 1 1/2 cups all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 3/4 cup apple butter
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon apple pie spice
  • 1 cup golden raisins
  • 1 cup confectioners' sugar
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons milk
Preheat oven to 350 degrees. Grease a 9 x 13-inch baking pan.
Beat butter until creamy. Add half the flour, the brown sugar, white sugar, egg, apple butter baking soda and apple pie spice. Beat together until well blended, then beat in remaining flour. Stir in raisins and spread batter in prepared pan. 
Bake 20 to 25 minutes, or until it passes the toothpick test in the center. Cool in pan on a wire rack.
For the icing, mix confectioners' sugar, vanilla and milk to drizzling consistency. Drizzle the bars with icing and cut into serving pieces.
Note: For apple pie spice you may substitute a mixture made from 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, 1/8 teaspoon allspice and 1/8 teaspoon cardamom.
