Blueberry Custard Oatmeal

Treat yourself to cozy, scrumptious, custardy hot oatmeal packed with blueberries in the morning. The oven does all the work.

Treat yourself to cozy, scrumptious, custardy hot oatmeal packed with blueberries in the morning. The oven does all the work.

4 cups old-fashioned rolled oats
3 cups unsweetened applesauce
4 large eggs, at room temperature
1/2 cup brown sugar
1 teaspoon vanilla extract
1 teaspoon roasted cinnamon or regular cinnamon
1 teaspoon salt
1 and 1/2 teaspoons baking powder
2 cups 2% milk, or any kind, even non-dairy, at room temperature 
2 cups fresh blueberries, plus extra for garnish
1/2 cup chopped toasted walnuts

Preheat the oven to 375 degrees. Spray or butter a 9 x 13-inch pan.
In a large bowl, whisk together the applesauce, eggs, brown sugar, vanilla, cinnamon, salt and baking powder until smooth. Add milk and whisk until smooth again.
Stir the blueberries, walnuts and oats into the applesauce mixture.
Pour the oatmeal mixture into the prepared baking dish and bake in the preheated oven for 45 minutes, or until the surface is a light golden brown. 
Cut into portions and serve hot with extra blueberries, or prepare ahead and refrigerate until ready to eat. Extra delicious with a drizzle of half-and-half or cream.
