Fall in love at first bite with these dense, golden, butterscotch-studded dessert bars.

I always thought of blondies as the opposite of brownies, kind of a poor relation. Just one taste of these dense, golden, butterscotch-studded dessert bars and it was love at first bite.

Ingredients

  • 1 cup (2 sticks) unsalted butter, plus more for the pan
  • 2 cups (packed) light brown sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 and 1/2 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1 and 1/2 cups butterscotch chips

Preparation

Butter bottom and sides of a 9-by-13-inch baking pan. Heat oven to 350 degrees F.

In a large mixing bowl, melt butter and let cool slightly. Whisk in brown sugar, eggs and vanilla until incorporated. Stir in flour, baking soda and salt. Fold in butterscotch chips.

Spread dough evenly in prepared pan and bake for 30 to 35 minutes — until golden — and the center passes the toothpick test. Let pan cool on a rack before cutting into bars.

Cooks’ Note: These bars are equally delicious using a gluten-free flour, such as Bob’s Red Mill 1-to-1.
