Beet Salad With Avocado and Goat Cheese

This colorful and fresh salad with tangy balsamic is the perfect starter — or a meal in itself.

Beet salad with a rich balsamic dressing is a beautiful meatless main dish or a side salad that pairs deliciously with pasta or roast meats. 

Serves four people.

Ingredients

Beet salad

  • one 1-pound package cooked and peeled baby beets
  • 1/2 cup walnuts or pecans, toasted, coarsely chopped
  • 6 cups mixed baby greens or arugula
  • 1/4 cup dried cranberries
  • 1/2 large avocado, peeled, pitted, and cubed
  • 3 to 4 ounces soft fresh goat cheese, plain or flavored, such as fogs

Shallot-balsamic dressing

  • 1/4 cup good quality balsamic vinegar
  • 3 tablespoons shallots, thinly sliced
  • 1 tablespoon honey
  • 1/3 cup extra virgin olive oil
  • kosher salt and freshly ground black pepper

Preparation

Heat oven to 350 degrees F and line a rimmed sheet-pan with foil. 

Toast walnuts or pecans in the oven for 7 minutes, until fragrant. Remove from pan and set aside.
Increase oven heat to 450 degrees F.

In a large bowl, whisk the dressing ingredients together, seasoning to taste with salt and pepper. 

Cut beets into wedges. In a separate bowl, toss beets with enough dressing to coat. Place beet wedges on the foil-lined pan and bake at 350 degrees for 13 minutes, until they caramelize slightly. Set beets to cool.

Roughly chop or crumble the toasted nuts and toss with the  greens and cranberries in the large bowl with the dressing. Season the salad to taste with salt and pepper. 

In the large bowl, or on 4 individual plates, arrange the salad mixture. Place the beets around the edges and arrange avocado squares in the center. Crumble goat cheese over the top and serve.

Cook’s note: Pre-cooked and packaged beets make this recipe a snap to make. Roast and peel your own in advance if you use fresh beets.

I am sad to say that I haven't tasted the Beet Salad With Avocado and Goat Cheese yet but it looks really yummy and I will surely taste it soon to try something new and delicious.
