Apple Pie Oatmeal

Tart-sweet apples and cinnamon make a hearty breakfast for crisp fall days.

Crisp fall mornings call for a hearty breakfast. Baked oatmeal is an easy and delicious way to start the day, and this apple-y good recipe is as easy as pie.

Serves eight people. 


  • 3 cups old-fashioned rolled oats
  • 1/2-cup packed light-brown sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon kosher salt
  • one 21-ounce can good-quality apple pie filling
  • 4 large room-temperature eggs, beaten
  • 3 cups milk (any kind)
  • 1/4 cup olive oil or vegetable oil
  • 1 tablespoon vanilla extract
  • milk or half-and-half for serving


  1. Preheat oven to 350 degrees F. Butter or spray a 9-by-13-inch baking dish.
  2. In a large bowl combine oats, brown sugar, cinnamon and salt. Stir in pie filling.
  3. In a separate bowl, stir together eggs, 3 cups of milk, oil and vanilla. Stir egg mixture into apple-oat mixture until combined.
  4. Pour mixture into prepared pan and bake for 45 to 55 minutes or until the mixture is set. If making ahead, let cool completely, cover and refrigerate. The oatmeal reheats nicely in the microwave.
  5. To serve, cut into squares and serve warm with milk or half-and-half.
