Almond Flour Chocolate Chip Bars

In our house, we often get complaints about the taste and texture of gluten-free desserts. These delicious, rich bars pass all taste tests with flying colors.

serves 24

  • 1/2 cup unsalted butter, softened
  • 3/4 cup light brown sugar
  • 1/3 cup white sugar
  • 2 large eggs, lightly beaten
  • 2 teaspoons vanilla extract
  • 13/4 cups almond flour (We use Bob's Red Mill.)
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 2 cups semisweet chocolate chips, or 1 cup semisweet and 1 cup white chocolate chips
  • 1/2 cup chopped toasted pecans (optional)

Preheat oven to 350 degrees. Lightly butter a 9 x 13-inch baking pan.

In a large bowl, cream together butter and the sugars. Add the eggs and vanilla, and mix until light and fluffy, about 3 minutes.

In a small bowl, blend almond flour, baking powder and salt. Add to wet mixture and fully combine. Stir in the chocolate chips and nuts.

Spread dough evenly into the prepared baking dish, and bake for 20 to 25 minutes, until golden. Cool for at least 15 minutes before cutting into bars.
