“I am a musician, singer and teacher specializing in the folklore traditions of Croatia. My sister and I direct the Seattle Junior Tamburitzans Croatian Folklore Ensemble. While on one of our tours of Croatia, I sampled Croatian Gibanica, a wonderful street food. I searched high and low for this secret recipe. I found several different recipes and from them developed my own recipe. I serve this warm, it can be paired with a fresh garden salad or as an appetizer served with Croatia’s national drink, Plum Brandy called Šljivovica.”

i very much enjoyed John's Croatian recipe of the cheese pita pie called Gibanica. A lot of us cooks know many recipes from different parts of Europe but I would like to see more from Croatia. Well done John! I will donate and purchase the cookbook today!

Have been making this for years and this pocket idea is different. Why do you crumble up the FILO?

I fold the filo so that it makes small pockets of filling and it makes a very pretty design, and makes the filo more puffy. You can also add spinach to make zeljanica. I make that using the layering technique that you are accustomed to.
