Risotto Nero

Chef Holly Smith – Café Juanita, Kirkland

Chef Holly Smith, of Kirkland's Café Juanita, shows you how to make Risotto Nero.

Note: Café Juanita is remodeling at this time and is closed. They plan to reopen at the beginning of July 2015. They also have a small temporary satellite restaurant named Café Juanita 926 Pop Up in Seatte's Capitol Hill. For the moment, this show and cookbook is where you can get your Café Juanita fix!

I came across the dish, Risotto Nero, and I wondered what it was? I googled the name and I found this video of Chef Holly Smith. I loved her video and now I know what the dish actually is. I don't think I can bring myself to eat it, I'm very visual, but at least I know what it is. I loved her video because she was in her home, using her everyday pots and pans. These are the types of cooking shows I truly love to watch. it's not about a battle or who can beat another chef. I don't watch those shows. To me, they take the joy out of the cooking experience. Thank you Chef Holly for showing me this dish. Thank you KCTS9 for showing REAL chefs!
