Spicy Prawns with Creamy Mascarpone Polenta

Jeff Berger of Bremerton shares his recipe for Spicy Prawns with Creamy Mascarpone Polenta. Jeff is also an avid wine collector - read his wine tips and advice below!

"I'm nearly 10 years retired form the retail liquor and wine industry. I've been collecting wine for about 40 years.

Spicy foods like these prawns do best with off-dry, medium dry (not sweet or late harvest) whites like Riesling or Gewurztraminer…but you do have to look at the label to be sure they’re not the dry versions.

My best wine tips:

Don’t feel the need to cellar or age most of your wines (usually reds).  I can’t tell you how many times I’ve been disappointed by reds I’ve held for far too long.  Buy at least three bottles of everything you think you’ll enjoy.  If you’re liking the first bottle, why cellar it.  Drink them all within a year or two when you know they’ll be delicious.

Be eclectic.  Try a little of everything to broaden your knowledge and palate.  And don’t be a red wine hound.  Realize that there are certain foods that are best complemented by white wines…like fresh cracked Dungeness crab for example.  Most reds will just cover up all of the crab’s delicate flavors.

To ensure a Seahawk victory…tequila shooters with salt and lime!  Then, after the win…a bottle of ice cold bubbly!"
