An interview with Chef Shelby Sewell, owner of Sanctuary at AdmiralFoodz Catering, and Zinnia Bistro.

Chef Shelby Sewell discussed one of her restaurants, Sanctuary at Admiral, as well as her catering philosophy and her creative process with KCTS9 Cooks. 

"Inspiration comes from lots of sources - sometimes it comes from a client, but it might come from a walk through the market. Or I'll have a dream of some kind - that I'll wake up in the morning and feel like, 'Today I'm gonna mix shizo with Thai basil and make a pesto. What kind of pesto can I make with that?' And I just begin to have a creative process about it.

Cooking is what you want it to be - it's love, it's family, it's happiness, and it's celebration. And that's why I like being a caterer."
