"I love my family very much, and like to cook and bake their favorite dishes. One day before Christmas I was searching for an egg casserole that would not only be colorful, but also fit in with my Italian heritage. Sundried Tomato Egg CasseroleWhatever recipe I chose also had to pass my family’s taste bud test. My husband, sons, daughter-in-laws, and grandchildren love Italian food. I love this recipe because includes one of my all-time favorite Italian cheeses, Pecorino Romano paired with sundried tomatoes. Believe it or not, when I got married almost 43 years ago, I didn’t know how to cook anything. My mom and dad were fabulous cooks and they usually prepared the food. Cooking became a passion for me when I took my first cooking class from some wonderful older ladies at my church. They taught me how to make basic whole food. My philosophy of cooking has changed over the years, and now I believe cooking with fresh ingredients has become very important to me."
