The Savory 6 with Amanda Wilde

Welcome to The Savory 6 – a weekly column featuring six weekly questions for one of the guests on our show. Check, Please! Northwest is all about dining out, but that’s not the only thing that happens at the table. When you put three strangers together and encourage banter, anything can happen! It’s a happy byproduct of the show and it’s one of my favorite parts – getting to know all of these food-loving folks. In this weekly article, we get to dig a little deeper into one of our guest’s culinary quirks and preferences.

This week, I of course chose one of my ‘celebrity’ crushes, Amanda Wilde. Amanda is the long-standing host of Swing Years, airing every Saturday night from 7 – midnight, on KUOW 94.9. When I worked as a host at the Palace Kitchen, I would listen to the show on my drive home and unwind with Swing before bed – it is an AWESOME show. You should listen!

Amanda chose Café Munir and it has since become one of my favorite restaurants to recommend, which means not only does she have great taste in music, this lady knows her food. I appreciate her focus on eating healthy, while still thoroughly enjoying her meals. Meet Amanda Wilde………

How often do you dine out?
Not as often as I used to, but as often as I can. But only when it’s worth it. It’s hard to beat homemade.

Fill in the blank:
If I see TRUFFLE on a menu, I HAVE to order it. (The fungus, not the chocolate)

What is your signature dish - something you make well and consistently?
Before I was more vegetarian, I made the best Italian meatballs; now it rotates, from fresh open-faced tacos with creamy jalepeno sauce to kale and white bean soup. Basically I follow this line – soups in the winter, salads in the summer. My friends love my artichoke dip and pear tarts. The other thing I do well is get creative and shock and amaze with what I can whip up with whatever is around in the fridge and cupboard. I keep it simple and fresh.

Do you have a morning ritual & what is it?
I always get rehydrated in the morning. I have a glass of water followed by a glass of raw juice before moving on to green tea. Then I’ll consider food.

Most awesome and annoying food trends?
It’s a food-serving trend – when did the word “bistro” come to mean an exposed eating area in a building with no baffling to absorb the noise? Oh, here’s a food trend I don’t like – too much combination of too many things – like a chocolate shortdough caramel ginger popcorn lime almond tart topped with bacon berry salted sherry sauce. Most awesome trend: hand-crafted small plates.

If you were stuck on a deserted island and only had ONE food with you, what would it be?
God, I used to know the answer to this. I would crave sweets, but without my crunchy greens I couldn’t live, so I’m going to have to say fresh spinach. I know, I know. I hope I can find some coconuts on that island.
