Recipe: Pan de Muerto

Pan de Muerto (Spanish for Bread of the Dead)
INGREDIENTS
| 5 | cups of flour |
| 8 | tablespoons of powdered yeast |
| 5 | egg yolks |
| 5 | eggs |
| 2 | sticks of margarine |
| 1 | cup of sugar |
| 3 | tablespoons of orange blossom water |
| 1 | tablespoon of orange zest |
| 2 | eggs for varnishing |
| 1 | pinch of salt |
Sugar to sprinkle |
DIRECTIONS
1. In lukewarm water dissolve 4 tablespoons of yeast. Add 1 ½ cup of flour and form a small ball of smooth dough. Let it rest for 15 minutes in a lukewarm place until it doubles in size.
2. Sieve the remaining flour with the salt and sugar. Add the eggs and other yolks, margarine, orange zest and orange blossom water. Knead well.
3. Add the ball of dough. Knead again and let it rest in a lukewarm area for an hour. Knead again and form the loaves in the desired size. Place them in a greased baking sheet and varnish them with the battered egg.
4. Decorate the bread with ‘tears’ made with the same dough and paste them with battered eggs, varnish the bread with the egg and sprinkle with sugar.
5. Finally, place the loaves in the preheated oven at medium temperature for 40-50 minutes.
