Smoked Salmon Fettuccini

serves 4

Ingredients

Salmon Pate

  • 1 6-ounce smoked salmon fillet
  • 1 cup sour cream
  • 1 cup cream cheese
  • 2 green onions, chopped
  • pinch of white pepper
  • 1 1/2 tablespoons cooking sherry

Place all ingredients in a blender and beat until thoroughly combined.
Note: This will make more than enough pate for the recipe. Save leftovers for another use or to duplicate the recipe.

Noodle

  • 8 ounces fettuccini, cooked al dente
  • 1/2 cup heavy cream
  • grated Parmesan cheese
  • crumbled smoked salmon (for topping)
  • chopped green onion (for topping)
  • parsley sprigs

Heat a nonstick saute pan over medium heat. Add cream and 1/3 cup of salmon pate until thoroughly combined. Add fettuccini and stir until noodles are coated and heated through.

Divide pasta among 4 serving plates. Top with pieces of flaked smoked salmon and Parmesan. Garnish with finely chopped green onion. Top with a generous sprig of parsley.

Figured out the calorie count and made this. It was a hit with the family. Quite savory.

I'm going to make this and use smoked paprika to sprinkle on top. Hopefully to add just a touch more smoky flavor.

The red sprinkles are paprika. The smoked salmon fettuccine was delish -- the entire show had amazing food :)

I'm going to make it tonite. I live for high-fat dairy products.I consume as much as I can. Nutrition is over-rated.

Love your recipes, including this one. However, I'm sure this is horrifically high in fat and calories. I'd appreciate seeing the nutritional information included with each recipe you publish in order to make an informed choice about whether to make it or even substitute ingredients to bring the calories and fat down and then lower the total calories. I'd consider using low- or nonfat cream cheese, sour cream and fat-free half-and-half, for example, to bring the calorie count down.

I like to live my life with flavor and texture, this recipe is full of both. It is very yummy! this recipe is a treat, which is what i like to get when going out or staying home for a special dinner.
If your watching calories and fat...!! order something else. All the more for me!!
