Recipes/Grilled Chicken with Peanut Sauce

Cook's Note: This dish is quick to make, with ingredients readily available in the cupboard. Watch the timing if you cook the chicken on the grill.

Ingredients for Chicken
- 4 boneless skinless chicken breast halves (about 2 pounds)
- 2 tablespoons vegetable oil
Ingredients for Peanut Sauce
- 2 garlic cloves, minced
- 1/3 cup creamy peanut butter
- 2 tablespoons sugar
- 2 tablespoons soy sauce
- 1/4 teaspoon red chili flakes
- 2/3 cup water
Preparation
Heat the grill to high heat (450 degrees) or a skillet to medium-high (350 degrees).
In a small saucepan over medium heat, cook garlic and peanut butter together until simmering, about 4 minutes. Whisk in sugar, soy sauce, chili flakes and 2/3 cup water. Reduce heat and simmer, stirring occasionally, until mixture starts to thicken, about 10 minutes. Keep sauce warm.
Meanwhile, rub chicken pieces with oil. Grill or cook chicken, turning once, until chicken is golden brown and almost cooked through, about 6 minutes total, 8 to 10 minutes if cooking in a skillet. Brush about 1 tablespoon peanut sauce over each piece of chicken and cook just until sauce starts to caramelize, about 2 minutes. Serve with steamed vegetables and remaining sauce on the side.
