Recipes/Banana Chocolate Chip Muffins

Ingredients
- 1 3/4 cups all-purpose flour
- 3/4 cup sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 1/2 cup canola oil
- 1/2 cup nonfat plain Greek yogurt
- 1 teaspoon vanilla extract
- 2 ripe medium bananas, mashed
- 2/3 cup semisweet chocolate chips
Preparation
Preheat oven to 350 degrees. Line muffin tins with paper cups.
In a large bowl combine the flour, sugar, baking powder, baking soda and salt. In a separate bowl, combine egg, oil, yogurt, vanilla extract and bananas. Stir wet ingredients into dry ingredients until just moistened. Fold in chocolate chips. Batter will be thick and sticky.
Fill muffin cups two-thirds full with batter. Bake for about 25 minutes, or until a toothpick comes out clean. Cool for 5 minutes and transfer to a wire rack. Eat while still warm, or pack them in your lunch after they fully cool.
