A low-carb version of 'pasta' that is kid-approved (much to our surprise). You'll need a spiral slicer to create thin zucchini noodles. There are many versions on the market at prices to suit any budget, and they are a super fun kitchen toy. You can also slice thinly by hand.
2 medium unpeeled zucchini, about 8 ounces each
1 tablespoon olive oil
11/2 cups marinara or pasta sauce of your choice
Parmesan cheese for garnish
Put zucchini through a spiral slicer. We chose a thin setting, so our zoodles resembled capellini. They cook faster and have a tender texture.
In a saute pan over medium heat, saute zoodles for 4 to 5 minutes, or to taste. Take out a strand to check for doneness. Meanwhile, in a separate pan heat marinara sauce until hot.
Transfer zoodles to serving dishes, spoon sauce over and top with Parmesan. Easy, low carb, gluten free and delicious!
