Not the traditional Louisiana version, this is a quick and healthy weeknight meal the whole family will love. If you want to add spice, use hot sausage and add in seasonings of your choice.
1 13-oz package turkey kielbasa, cut diagonally into 1/4 inch slices (or spice it up with Andouille sausage)
1 red onion, chopped
1 cup chopped fresh mushrooms (optional)
1 green bell pepper, chopped
4 cloves garlic, chopped
2 15-ounce cans canned kidney beans, rinsed and drained
1 16-ounce can diced tomatoes
1/2 teaspoon dried oregano
1 pinch cayenne pepper
salt and pepper to taste
3 cups cooked rice
In a large skillet over low heat, cook sausage for 5 minutes. Stir in onion, mushrooms, green pepper and garlic; saute until tender. Add in beans and tomatoes with juice. Stir to combine and season to taste with oregano, salt and pepper. Simmer uncovered for 20 minutes to just blend flavors. Serve over rice.
