Thanksgiving Day Bake
KCTS 9 Cooks Comfort Food, 2003Loretta Oscroft, Surrey
Serves 4 to 6
Ingredients
1 large turnip, peeled and chopped small
6 carrots, peeled and sliced thick
1/8 cup butter
1 tablespoon cream
2 tablespoons brown sugar
pinch of nutmeg
salt and pepper to taste
Topping
1 tablespoon brown sugar
1/2 cup pecans, finely chopped
Preparation
Preheat oven to 325 degrees. Boil peeled and chopped turnip in one pot and peeled and sliced carrots in another pot. Remove each pot from heat when vegetables are tender to touch. Drain. Combine turnip and carrots in one pot and mash with a masher or immersion blender. Once mashed add butter, cream, brown sugar, nutmeg, salt and pepper. Stir to combine well and transfer to an oven baking dish.
Smooth out turnip-carrot mixture into the baking dish and top with mixture of brown sugar and pecans. Cover baking dish and bake for approximately 20 minutes. Serve and enjoy!
Note: To make ahead, cook veggies as instructed and freeze in a plastic container. Allow to thaw in microwave. You may need to drain excess fluids before adding remaining ingredients and baking.

`The tops of turnips have one of the best sources of many vitamins including G. Note how they are always discarded and thrown away.
