Sher’s Lime Balsamic Salmon

Serves 5

Ingredients

5 5-ounce salmon fillets
2 tablespoons butter
3-4 cloves garlic, minced
1/4 cup nice white wine (something you would actually drink!)
2 tablespoons honey
1/4 cup balsamic vinegar
juice from 1 small lime
1/4 teaspoon lime zest
4 teaspoons Dijon mustard
1 teaspoon dried oregano
Black pepper and salt to taste

Preparation

Preheat oven to 400 degrees. Line a baking pan with foil, and spray with nonstick spray.

In saucepan, melt butter, and then add garlic and wine. Cook over medium heat about 3 minutes, until garlic is soft. Mix in honey, balsamic vinegar, lime juice, lime zest, mustard and dried oregano. Add black pepper and salt to taste.

Simmer on medium heat for 3 or 4 minutes, stirring. Place salmon fillets in baking pan, and spoon lime glaze over each piece. Marinate for 20 to 30 minutes.

Bake for 10 to 14 minutes, until fish flakes easily with a fork. Remove from foil (you may leave skin behind on foil). Great with rice and a salad.
