Lamb Burgers Stuffed with Goat Cheese

Serves 6
Ingredients
3 teaspoons olive oil, divided
1/2 cup finely diced onion
3 ounces soft goat cheese
2 teaspoons chopped fresh basil leaves
2 teaspoons chopped fresh oregano (or 3/4 teaspoon dried)
11/4 pounds ground lamb
1 egg
1/2 cup bread crumbs
2 cloves garlic, minced
1 teaspoon ground black pepper
Preparation
Heat your grill to medium-high. Heat 1 teaspoon olive oil in a skillet over medium heat. Saute the onions until soft and translucent, about 4 minutes. Remove from heat and transfer to a large bowl.
Meanwhile, in a small bowl, mix together the goat cheese, 2 teaspoons olive oil, basil, and oregano until well combined; cover and chill for 5 minutes.
Add lamb, egg, bread crumbs, garlic and pepper to the onions. Knead ingredients together gently by hand. Divide lamb mixture into 6 parts and roll into balls. Form each patty into a bowl shape with a hollow in the center. Fill with a heaping tablespoon of the goat cheese mixture. Gently stretch and close the meat around the cheese to form a burger.
Grill patties until well done, about 8 minutes per side. You may also cook these indoors in a frying pan.
