KCTS 9 Kitchen Recipe: Green Tea Muffins with White Chocolate Chips

Green Tea Muffins with White Chocolate Chips

Makes 7 to 8 muffins

Ingredients

1 cup flour
1 teaspoon baking powder
2 tablespoons green tea powder (Maeda-En Brand)
1/4 cup white chocolate chips
1/3 cup sugar
1/8 teaspoon salt
1/3 cup canola oil
1 egg
2/3 cup milk (I use whole milk.)

Preparation

Preheat oven to 375 degrees. In a large bowl, mix flour, baking powder, green tea powder, white chocolate chips, sugar and salt. In a separate bowl, mix oil, egg and milk.

Add wet ingredients to dry ingredients and mix gently; don't overmix.

Pour batter into paper-lined muffin cups about two-thirds full. Bake for 20 to 23 minutes. Check for doneness with a toothpick.

I recommend putting the muffins in a microwave for 20 to 25 seconds before serving. That way, you will enjoy the aroma of green tea and melted white chocolate chips.
