KCTS 9 Kitchen Recipe: Garlic Mashed New Potatoes

Garlic Mashed New Potatoes

Serves 6

Ingredients

8 medium new potatoes, cut in quarters (Red potatoes give the dish a nice rustic look.)
4-5 cloves garlic, peeled
2 tablespoons butter
1/2 cup nonfat milk, heated
1/2 teaspoon salt
1/4 cup grated Parmesan cheese

Preparation

Place potatoes and garlic in a large saucepan. Cover with water and bring to a boil. Reduce heat, cover and simmer for 20 to 25 minutes or until the potatoes are very tender (test with a fork). Drain well. Add the butter, hot milk and salt; mash to desired texture. Stir in Parmesan cheese and serve in a heated bowl.
