Broccoli-Onion Deluxe
KCTS 9 Cooks Favorite Recipes, 2004Julia LaFontaine, Tracyton
Serves 6
Ingredients
1 pound broccoli cut up (2 to 3 cups)
3 medium onions, cut up (2 cups)
1/4 cup butter
2 tablespoons flour
1/4 teaspoon salt
1/8 teaspoon pepper
1 cup milk
1 8-ounce package cream cheese (I use the 1/3 less fat kind--you can't tell the difference in the taste, and it's softer to mix into the white sauce.)
1/2 cup grated sharp cheese
1 cup soft bread cubes or crumbs
Preparation
Steam cut-up broccoli in covered pan, salted, until crisp-tender, about 8 minutes. Drain. Steam onions in covered pan, salted, until tender. Drain. You may cook them together if you have a large enough pan.
In a saucepan, melt half the butter. Blend in flour, salt and pepper. Add milk and cook, stirring constantly, until thickened and bubbly. Reduce heat, then blend in cream cheese until smooth. Pour sauce over vegetables and mix lightly. Pour into a 11/2-quart casserole dish. Sprinkle with grated cheese. Melt remaining butter and toss with bread cubes. Layer over cheese. Bake at 350 degrees until heated through, 40 to 45 minutes.
