Vanilla Bean Crème Brûlée

serves 6


  • 6 egg yolks
  • 2/3 cup sugar
  • 1 1/3 cups cream
  • 1 1/3 cups milk
  • vanilla beans
  • salt


Split and scrape vanilla beans and add husks to milk and cream. Heat mixture to 160 degrees. Separate egg yolks and put them in a bowl. Add sugar and stir together. Incorporate cream mixture into eggs and sugar (slowly, as not to scramble the eggs), and add a pinch of salt. Pour into 5 oz. glass bowls or ramekins. Put them on a tray and add water up to 1/2 inch around bowls. Bake at 310 degrees for 45 minutes.
