This versatile rice dish is both fragrant and flavorful. Add in veggies of your choice, raisins, nuts, even extra spices such as a cinnamon stick, to make this easy pilaf your own. Raid the bulk spice section of your local grocer's for the cardamom, fennel and more to buy just what you need.
serves 3 to 4
2 tablespoons unsalted butter
1 cup basmati rice
1 teaspoon ground turmeric
1 bay leaf
4 whole green cardamom pods
4 whole cloves
1/2 teaspoon whole fennel seeds
1/2 teaspoon kosher salt
11/2 cups boiling water
1 cup frozen peas or mixed cubed veggies, at room temperature (optional)
Melt the butter in a saucepan with a tight-fitting lid. Stir in the rice until it is coated with the butter. Add spices and salt, then pour boiling water over all.
Cover and simmer on low heat for 15 minutes. Do not stir rice in the meantime. Uncover, stir in veggies, cover again and let sit for 3 minutes to heat the veggies up.
Remove the bay leaf, cloves and cardamom pods as you eat!
