Black Tiger Prawns and Oregon Shrimp Cakes
- 1 red bell pepper, finely diced
- 1 green bell pepper, finely diced
- 8 green onions, finely diced
- 1 Tablespoon garlic
- 1 Tablespoon cajun spice
- 4 Tablespoon butter
- 1 cup white wine
- 2 lb Oregon Shrimp meat (dry)
- 2 cups bread crumbs
- 2.75 lb prawns
- 3 eggs
Saute peppers, onions, garlic and spice in 2 Tbsp. butter. Add white wine and cook down until dry. Cool.
Preheat oven to 350 degrees. Puree 3/4 lb prawns with eggs. Slice remaining prawns. Combine all ingredients, mix will. Form into approximately 1/2 cup sized cakes. Brown both sides in 2 Tablespoons butter and place in oven for approximately 12 minutes. Yields 10 servings of 2 cakes each.
