Carol, I live in the Okanagan also and this is my fave Apple Butter recipe
5 1/2 lbs. apples, peeled and grated
3 cups sugar
2 to 3 teaspoons cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon salt
Place all ingredients in a slow cooker and mix well. Cover and cook on high for about 1 hour. Reduce heat to low and cook for 9 to 11 hours and dark brown. It depends on the type of apples you use as some have a lot more juice than others. Stir occasionally at first but more frequent as it thickens or it will stick. Uncover and cook on low about 1 more hour to your desired thickness. You can freeze this in freezer containers or can in glass jars. This is highly adaptable to your own taste such as more or less sugar and spices. Enjoy!
