Paula's Weekly Kitchen Tip: Herbology

Slightly wilted parsley or mint in the refrigerator? They are too expensive to waste. Bring them back to life by trimming off the stem ends and any brown leaves. Swish them in a bowl of ice water and leave them for about 5 minutes until they perk up.

Delicate herbs such as basil, parsley and mint can be treated like a bouquet of flowers. Trim the stem ends, stick them in an inch or so of water and store in a cool place.

America's Test Kitchen came up with this handy way to make your own dried herbs. Place the clean dry herbs on a paper towel in the microwave and zap them on high for 30 to 40 seconds. Crumble and store in an airtight container.
