Paula's Weekly Kitchen Tip: Make-Ahead Mashed Potatoes

I learned this from Chef Carol Dearth of the Sizzleworks Cooking School, when she was in our studio making Wasabi Mashed Potatoes for our Northwest Favorites show in May 2009.

To hold mashed potatoes for up to 2 hours while the rest of your meal cooks, place in a 160-degree oven, very loosely covered. If covered tightly, condensation will drip back into the potatoes, causing them to turn into a brick. Whisk potatoes before serving.
