Here's America's Test Kitchen's tip for the perfect baked potato: For best results, bake potatoes at 350 degrees until tender, about an hour and 15 minutes. You'll need to release the steam quickly to keep the potato fluffy and light.
Use the tines of a fork to make a dotted X on top of each baked potato. Press in at the ends of the potato to push the flesh up and out. An added bonus: this method helps the potato hold onto butter.

TIPS: When baking I grease the pans with oil spray over the dishwasher door. This way I don't have to wipe and cleanup.
TIP: When whipping cream I add icing sugar instead of regular sugar, this way I can whip the cream 4 hours earlier and have the dessert ready to go when my guests arrive for dinner.
